When eating a ketogenic low carb diet, it is essential that you eat greens for the nutrients that they provide. I happen to love spinach and even better it is simply packed full of potassium! Once you add some good fats to keep you fueled up, you have a full meal in front of you.
Before I was eating low carb, I always loved hot dips. Today I decided to attempt a version of one of my favorites, easy spinach and artichoke dip. This recipe is incredibly easy, does not require many ingredients, and can be prepared quickly. Do keep in mind that the onions I mention are optional. The more you add, the more carbs will be in the dish. They add up fast!
After cooking and mixing it all together, this is the finished product, easy spinach and artichoke dip served hot. Excellent to dip your pork rinds in, or put on a steak. Let’s begin cooking!
You are going to be cooking down a LOT of spinach. I would make sure to use a deep pot because 1.5 pounds in spinach is actually a lot of volume. Throw a little butter in your pot and cook on low, adding spinach when there is room till all of it is cooked down. This took me about 10 minutes on very low heat. Finally, when it was all cooked down, this was the result.
Once you have your 1.5 pounds of spinach cooked down, you will need to drain off all the excess water. You are making a dip, not a soup, so this part is important. Once the water is drained, return the greens to the pot. You will have wanted to cut up all your artichoke heats and garlic earlier. If you have not, turn off the heat and get chopping. Once all your veggies are chopped, put the artichoke hearts, garlic, and if you so desire, dehydrated onions in the pot and cook for about 5 minutes.
Make sure you are mixing it up regularly. After you cook this mixture for 5 minutes, put in a little salt to taste. Now put in your cream cheese. Make sure you have chopped your cheese into cubes or it will not mix well. Add the cheese, and let it cook while you mix it into your veggies.
Stir it up complete and you have your finished spinach and artichoke dip, ready to be served hot! Simply spoon it into your favorite serving bowl and you are ready to go.
- 1.5 Pounds Spinach
- 1 Can Artichoke Hearts
- 1 Brick Cream Cheese
- 1 Tablespoon Unsalted Butter
- 1 Tablespoon Garlic
- Salt
- Optional: 1-3 Tablespoons Dehydrated Onions
- In a deep pot, add your butter over low/medium heat and cook down all of your spinach.
- Remove the water from the spinach and add it back to the pot.
- Add your chopped up artichoke hearts, garlic, salt, and optional onions. Mix and cook for 2-5 minutes.
- Add the cream cheese in small cubes. Mix until your dip is smooth and creamy.
- Serve and Enjoy!
